The capacity of your brewing container determines how much tea to use. A standard cup of tea is 6 oz. Rule of thumb is to use 2 grams for every cup of water. Simply determine the size of your pot or cup and use the correct amount of the chosen tea.
Since a cup of tea is mostly water, it’s essential to use it good and fresh. Filtered or spring water is best. The water should not be void of oxygen so it is important to draw it immediately before boiling.
Steeping times are critical to the desired taste of the cup. Over extraction is the most common issue, so the brewing time must be monitored. Full leaf teas require additional time due to surface area; smaller leaf teas take less. Although somewhat subjective here are some guidelines:
